March is almost gone and I wanted to share this Irish Coffee Recipe with you all. Prep time: 10 minutes Chilling time time: 1 hour Yield: 1 drink This recipe makes enough brown sugar syrup and whipped cream for several cocktails. Store the extra in the fridge. The flavour concentrates that we sell here on the site are really concentrated.  You all know about baking for example, a common flavour extract is vanilla. So you’ve received these flavour concentrates and are wondering hmmm what do I do with them?  Well use your imagination and I am confident that you will find a good use for them all!  I like to "test" flavours in whipped cream, or a glass of water.  Just add one drop and then you can get the idea. I have a morning favorite and that is my French Vanilla flavoured coffee.  Or hazelnut, or caramel, or Irish cream etc. I used to by the International Delight cream at the grocery store, but I found that stuff to be very expensive...

What are Diketones? Should we be concerned about inhalation safety?

Diacetyl is a chemical largely used in the flavour manufacturing industry to simulate a "buttery" or "creamy" taste. Diacetyl is part of a group of chemicals called Diketones. This group of chemicals also includes Acetoin and Acetyl Propionyl. Under certain conditions, Acetoin and Acetyl Propionyl can form trace amounts of Diacetyl.
